Description
Please join us in celebrating the works of Dr. Micha Peleg in this technical symposium that will highlight his foundational contributions to the future of food science and engineering. The program will include a diverse group of collaborating scientists that have worked with Dr. Peleg throughout his career.
The program will focus on three main topics:
- Food processing
- Microbial inactivation and nutrient degradation kinetics
- Colloidal systems – From surfactant assemblies to organogelators
The program fees will also help to contribute to establishing a scholarship for food science students in honor of Dr. Peleg.
The proposed agenda will include:
- Registration & Continental Breakfast
- Eric Decker, UMass; Maria Corradini, Rutgers: Introductory Remarks
- Osvaldo Campanella, Purdue University: Following Micha’s steps at Purdue University: From Rheology to Microbiology
- Jochen Weiss, Hohhenheim University: On the usefulness of Micha Peleg's microbiological models
- Tiny van Boekel, Wageningen University: Fast Forward with Kinetics in Food Science: a tribute to Micha Peleg
- Coffee Break
