A team of UMass food scientists, Hang Xiao and Timothy Goulette, have developed a groundbreaking, user-friendly mathematical model for NASA to help ensure that astronauts’ food remains rich in nutrients during extended missions in space. The study examined the rates of degradation of thiamine (Vitamin B1) over time in various foods. The research team prepared and stored 3,000 pouches of ‘astronaut food,’ following exact NASA specifications, for the study. Full story.
