Mounting epidemiological and experimental evidence consistently indicates that obesity is a robust risk factor for several common cancers, and especially so for colorectal cancer. As obesity has reached an epidemic level and increases in the scope of the problem are further projected, it is critical to understand the mechanism(s) responsible for the link and thereby to develop strategies for prevent obesity-related cancer.
Nutrition
The purpose of this research is to identify the microbial community constituents of mosquito midgut contents in order to identify new pathogens and functional gut microbes.
While good nutrition and moderate physical activity can promote health and delay disability in older adults, most do not follow dietary recommendations, and fruit, vegetable and whole grain consumption remains low. Several studies have indicated that older adults can increase fruit and vegetable intakes through nutrition education. Additional and innovative efforts are needed, however, to make progress toward achieving national guidelines in diverse populations of older adults.

Chlamydiae are implicated in a variety of clinically and economically important diseases in livestock and companion animals. These bacteria are associated with abortion, conjunctivitis, encephalomyelitis, enteritis, pneumonia, and polyarthritis in ruminants. Infection with these bacteria is the most common cause of abortion in sheep and goats and also causes zoonotic infection in humans which, in pregnant women, can result in spontaneous abortion.
Some food oils, such as those containing omega-3 fatty acids, are nutritionally beneficial and yet largely under-consumed in the United States. These oils can be very unstable causing the formation of strong off-flavors that result in consumer rejection of omega-3 fortified food products. This project will develop new technologies that can stabilize omega-3 fatty acids so they can be incorporated into a wide variety of foods. Production of omega-3 fatty acids fortified foods could have significant consumer health benefits especially for heart and mental health.
There is a critical need in the meat processing and raw vegetable processing industries for the development of a rapid method for detection of infectious bacteria such as Salmonella and E. coli O157:H7 in such products well before shipping, so as to prevent infectious outbreaks and costly recalls.
Rates of obesity and poor nutrition continue to increase for both adults and children in the United States. This is especially prevalent among low-income populations, as parents frequently turn to calorie-dense but low-nutrient foods when family food resources are limited. Eating habits that are formed during childhood are critically important as they lay the groundwork for future patterns that can affect lifelong health. Families need guidance to get the most nutrition from their limited resources in order for their children to grow and thrive.
Both adult-onset obesity and childhood obesity pose real health risks, with childhood obesity known to be associated with increased risk of chronic diseases. With current rising trends of overweight and obese children, there is great need to develop additional practical approaches to target the obesity epidemic. The objective of this proposed research is to develop a feasible and practical food-based approach to help reduce the incidence of childhood obesity and overweight children.
Although the medical breakthroughs in the early part of the 21st century have made significant progress in the treatment of many chronic diseases, disease prevention or even delay is of critical importance. Healthy People 2010 & 2020 and USDA dietary guidelines for Americans strongly recommend increased consumption of fruits and vegetables that are rich in antioxidants and bioactive phytochemicals to prevent or attenuate diet-related chronic diseases and to improve health.
