Project Description: 

The incidence and prevalence of some chronic diseases, such as inflammatory bowel disease (IBD), obesity, and other inflammation-related human disorders, have risen dramatically in recent decades in United States and other countries. These alarming trends suggest that it is of critical importance to develop novel strategies for preventing these chronic diseases. In this project, we will study the effects and mechanisms of food-derived bioactive compounds on development of the chronic diseases.  Furthermore, we will characterize the metabolic fates of food bioactives after oral ingestion, and develop novel strategies to enhance their metabolic stabilities and biological activities. Together, these efforts will provide the fundamental knowledge which is critical to develop safe and effective diet-based strategies for disease prevention.
