This summer I got to work with Dr. Cordeiro and her research team, with Ivy Johnson-Kanda as my mentor. I did multiple literature reviews including on the topics of “Best dietary tools for HIV/AIDS patients”, “How food can migitate the development of various diseases including disease/atherosclerosis, diabetes, and cancer”, “Health disparities and what has worked to close gaps for cardiovascular disease, hypertension, diabetes, and cancer”, and “Current events about food safety, environmental contaminants, natural toxins, pesticides, food additives, water, GMOs”. Using the research, I created an outline of informational videos and engaging activities for the introductory general nutrition class. Lastly, I got to take part in the focus group sessions in Springfield- Childcare support for Participants by observing and taking notes.
